To preservation of recipes of ancient Russian dishes we more all is obliged to the Russian scientist of the end of a XVIII-th century V.A.Levshin (1746—1826) which name is immortalized by A.S.Pushkin in "Evgenii Onegine". There (the note to VII head) Pushkin named its writer by an economic part. Levshin has collected remained in the people since pre-Pertine times recipes of ancient Russian spices and has published them in cookbook «Russian cookbook»
